Athlete.

OH MY LANTA!

My doctor called me an athlete today.  (She should be knighted.)

She also said I had strong abdominal muscles and arm muscles (heck yes, she felt 'em!).

After doing a pretty complete physical, she said I was healthy and strong.

OH MY LANTA!!

(Insert sobs here)

Never in my life have I had someone in the medical field tell me that.  Do you know how AWESOME that feels?

I've always been told the complete opposite.

All this hard work pays off.

Saying no to the junk pays off.

Running 4-6 miles 6 days a week pays off.

Lifting weights pays off.

Holding that darn plank pays off.

HIIT circuit after HIIT circuit pays off.

This is a sweet moment in life that I'm at right now.

I love that I'm HEALTHY.

Now, to be honest, I still have 11 more pounds to go to be in the healthy range for my BMI…but she wasn't worried that I would get there soon…and I'm not worried either.  I'll get there this summer for sure!

But, I'M HEALTHY!

This feels far better than anything else in my life.

It feels better than downing a large things of fries.

It feels better than sitting on my rear end watching a movie.

It feels better than any ice cream or funnel cake or burger or whatever.

At my check-up today, she also told me I'm carrying around lots of extra skin.  (sigh.)

She said I was a great candidate to have all the extra skin removed.  I would love to have this done at some point - but after I'm done having children and have maintained a healthy weight for a year.  Something to look forward to for sure!

It was so great to go in and see her after a year had passed.  When I walked in, I'm pretty sure that was her jaw that dropped to the floor.  It was so good to just sit and chat with her about how I lost all this weight (118 pounds/53kg) and to share with her that I'm going to go back to school to become an RDN.  I think the wheels in her head were spinning of how we could partner up - doctor/dietitian.  Pretty sweet.

I'll say I feel proud today.

Full of joy.

Happy.

I'm doing something right.  I'm taking care of me and making sure that I'm doing the best I can do to be around for my family for a long time to come.

Spinach Lentil Soup

One of my resolutions was to blog once a week. With that in mind...I'm sharing a recipe that I have made I think 3 times in the past 4 weeks. It makes a lot so there will be plenty of leftovers. Pair it with a side of grilled asparagus or roasted broccoli!  Yum!  I also paired it with these amazing buffalo chicken sausages (thin n trim is the brand name - found them at Kroger).  Kind of a weird pairing - but one sausage link and a cup of this soup was a great lunch! SPINACH LENTIL SOUP 1 onion 3 or 4 large carrots (do 4) 4-5 cloves garlic 2 cups dry lentils (brown or green - i've been using green) 15 oz can diced tomatoes (or fresh.  i actually have been putting in a can of fire roasted diced tomatoes and this has been awesome!) 4 cups vegetable broth (or chicken or beef.  whatever you have on hand.) 3 cups water 5 oz spina...

Burpees. Yea.  8 rounds of those suckers AT THE END OF A WORKOUT (including a run). Done. I survived, obviously.  (I'm here writing it down.) Steph says when the workout is hard..."yea, but did you die?!"  Ok, ok... :) I've been a bit nervous about starting off these last two weeks with this 30 day Shred program with Kyle gone (feeling lonely eating??) and so busy with kids that workouts won't happen.  Only on the 3rd day with him gone and so far - so good.  Sticking to it. (It helps too that at night I don't want to go into the kitchen at the risk of seeing little critters that think they can enter my home.) #thatsanotherstory I did a weight check and inches check this morning and happy to say that I lost 3.9 pounds this past week and 7.5 inches total. What brings my heart happy is that I am now 2 pounds away from my pre-pregnancy weight.  Man, that feels good.  But, I'll be honest - my body doesn't look like what it did before sweet L...

School, Goals, & Baked Falafels

Yea.  Weird title for sure. Those 3 things don't really go together. But, I haven't updated for a bit over a week so wanted to play catch up a bit. School.  I have decided that I would like to head back to school and pursue a career in nutrition!! (And because I know this question will be asked)   Wait, Sarah.  What about Kenya? Love things happening here in Kenya.  We are still here!  I would just like to extend my knowledge in this area - an area that I've fallen in love with and would love to use to help other folks. I've been talking with my "go-to" gal, Stephanie, and she has recommended several options ranging from becoming a health coach to a RDN (registered dietitian nutritionist). So right now, just researching all kinds of things - what field, schools, programs, etc. It's an exciting time for sure!  I'll be sure to let you know when I've decided which route I'll go to.
